OYSTER BAY, St MAARTEN Hellooooooooooo Nhoo Yoawk. That’s my lame attempt at typing a New York accent. Lauren, Matt and their entire guest list were all from New York and the surrounding areas. Being around such honest, fun, loud, comfortable with themselves kinda people… is so refreshing. Now, many of you know that I have an OVER THE TOP loud laugh… For the first time I can remember… NO ONE batted an eye when I busted it out. Why? Because I fit right in. I knew I was in good company.

Lauren and Matt had an amazing day full of laughter, tears, lifelong friends, loving families, amazing tropical weather, and the best food I’ve ever had in my life… more on that later. 🙂

The weather in St Maarten… WOW! It’s phenomenal. It never gets too hot, the breeze is going non stop and the sky is full of those poofy clouds that look like things. Know what I mean? Seems to me when Mike and I always play that game he thinks everything looks like an amoeba… while I’m picturing something much more elaborate like the Statue of David. Okay… that might be an exaggeration, but you get the point. The weather on their wedding day was certainly not an exception; it could not have been more perfect. We love the islands.

I started out the day in Phillipsburg with the lovely ladies. Lauren, Nicole, both moms and me… all piled into a Taxi and headed out to get their hair did. We went to Maurices Salon where THE Maurice did everyones hair. While we were sitting there Nicole noticed a frame sitting next to his station, she thought it looked like Brandi. Nicole was quickly corrected. “No!” Maurice exclaimed, “that’s Miss St Maarten, and I’m her pageant coach.” Yes, we were in the presence of THE coach of THE St Maarten Pageant. Oh the stories he told us about the Miss World contest… EEKS! 😀

The ceremony was gorgeous! Albeit a bit windy… but, gorgeous! The arch blew over about halfway through the nuptials; I just happened to be standing right next to it and dodged out of the way. Everyone gasped and then laughed.

Okay, I already mentioned the food and how awesome it was. The reason: Matt is a professional chef and took special interest into the menu. It showed! Here’s what I remember. The cocktail hour the catering staff brought around sweet sesame chicken and oysters. When we first sat down, a crab cake with lobster sauce awaited us. Then a vinaigrette duck salad soon followed. And of course.. the main course (HA). Mike had a DELICIOUS steak cooked perfectly! I had what I think was Snapper. I think there was also a lamb option. A cinnamon banana raspberry cake followed dinner. Now, again… I’m not sure if I got all of that right, but I can tell you this…. ARE YOU KIDDING ME… MMMMM MMMMM MMMMMMMMM!!!!!!! Now, as you all know, I’m a RIDICULOUSLY picky eater. At breakfast the day before as we were talking about how Matt is a chef and how I’m sorta picky… he insisted that I try. I gave him a big hug at the end of the night and said… I TRIED THE DUCK!!!! AREN’T YOU PROUD?! He had the BIGGEST smile on his face… clearly, he was proud. 😀

To Lauren and Matt… thank you thank you thank you. Lauren, thanks for making us feel so loved and appreciated. To Matt… you saying, “you will be in our hearts forever” meant more than you will ever realize.
